most stable Linux : RHEL / CentOS
the RedHat family:
- Fedora : the testbed for new versions, technologies and software.
- when considered stable, they are integrated into RedHat Enterprise Linux. Much effort to getting rid of bugs & security fixes are applied as soon as possible.
- CentOS uses the same code base as RedHat and recompiles it with a changed branding and a few features missing.

Fedora : cutting edge with the risk of instabilities
RHEL + you need support : OS is stable
CentOS + no support - miubys some ft : OS is stable

Debian basically uses the same system, with their unstable, testing and stable branches, but due to some imho questionable decisions that were made, it requires them a lot more effort to achieve the same result.
Debian has also some dependencies on python 2.x

until recently most popular server for webservers = centos ( now Ubuntu)
